We love baking our own bread. Something about the aroma of bread in the oven makes the finished product taste that much better! Naturally, we also like to add a variety of different spices to our bread for an extra kick of flavour.
Today, we decided to try out our Kootenay Spice Herbs de Provence mixed into our dough (that’s the middle one on our pic at the top of this blog). It is such an aromatic blend, we had no doubt it would enhance our loaf. We use a very basic, traditional recipe that we have always had great results with! We also use our own smoked rock salt, finely ground.
Try it out, you’ll be so happy you did! You can knead it by hand, use a kitchen mixer or a bread machine, whatever works best for you.

Herbs de Provence White Bread
1 cup warm water (hot tap water)
2 Tbsp honey
2.25 tsp instant, quick rise yeast
1/4 cup vegetable or canola oil
3 cups bread flour
1.5 tsp Kootenay Spice Smoked Rock Salt, finely ground
2 tsp Kootenay Spice Herbs de Provence
1 tsp extra virgin olive oil
First things first, it is a good idea to heat up your mixing bowl with warm water before starting the recipe. Let warm water sit in the bowl for 2 – 5 min. Dump this water and put in your 1 cup of warm water for the recipe. Dissolve the honey into the water (heat up your tablespoon with warm water first, the honey will pour out better). Sprinkle the yeast over your water and honey mixture. Let stand for about 10 min, until the yeast is dissolved and foaming. Here is an example of what we consider nicely foaming yeast.
Stir in the veggie or canola oil.
Completely stir in 1 cup of the flour, then the second. If you are kneading by hand, you will want to take the dough out of the bowl before the third cup & knead in the rest of the flour on a non-stick or well-floured surface. Mix the ground Kootenay Spice Smoked Rock Salt and Kootenay Spice Herbs de Provence into the last cup of flour before kneading or mixing into your dough.
Knead or mix for about 10 min. Drizzle in olive oil and keep kneading until dough is elastic and does not stick to your fingers. Roll the kneaded dough into a ball, place it in a lightly oiled bowl, and cover tightly with saran wrap.
Let your dough rise in a warm place for about an hour, until the dough ball has at least doubled.
Once the dough has doubled, punch it down. Yes, literally (but gently) punch it 5 – 7 times to release some of the air. Take the dough out of the bowl and gently shape it into a tube that will fit in the bottom of a bread pan (or small balls for buns, whatever shape you’re working with).
Let it rise in the pan for another 30 min. It should fill much of the pan once risen.
Preheat your oven to 400°F. Place in oven and cook for 10 min. Turn 180° and cook another 8 min or until the top is lighty and evenly browned.
Remove from the pan immediatey and place on a wire rack. Lightly brush with olive oil or butter and let cool before tasting.
